Ingredients:
- Minced Chicken
- Mushroom* - Any kind will work, Wood ear, Shitake
- Celery*
- Carrot for more nutrition and crunch
- Onions
- Garlic
- Ginger
- Red chilies; Green also works
- Water chest nuts
- Cashews
- Lettuce - Butter lettuce is used in PF Chang, but Iceberg lettuce and Romaine Lettuce also work that have some crunch to it
- Spring green Onions
- Soy Sauce
- Rice Vinegar
- Hoisin Sauce
- Oyster Sauce
- Sesame oil
- Cashews for more nutrition and crunch
Method: Dice all the vegetables, finely chop, onions, garlic and chilies.
To few drops of Sesame oil in a pan add minced chicken until it turn brown and all the water is evaporated. If you do not want to overcook, remove the water that oozes from the mince chicken and save it like a stock or broth you can use it to drink later or use in any cooking. To the same pot push all the chicken aside and fry minced garlic, ginger, onions, celery and chilies until some raw smell goes away. Add chopped mushrooms, fry for a minutes and then start adding all sauces. Allow chicken to absorb all the sauces and until sauces thickens, top this with chopped spring green onions
This is a very quick and easy one pot dish that is also a great source of protein, Fibre and nutrition!
Celery has a great balance of sodium and potassium in it, that helps for bloating Gas and Water retention! More so since we are using sauces like Soy sauce and other sauces that already have salt loaded in them. So there is absolutely no need to add any salt to prepare this dish separately!!!
