Ingredients:
- About 6 Wraps - Chapathi or tortilla or any healthy wrap of your choice
- Enchilada sauce - 1 can
- Mexican blend shredded cheese
- Refried beans - 1 can
- Spinach 2 bunches
- Cumin powder
- Pickled Jalapenos slices
- Pickled black Olives - chop into slices and keep them ready
- Galic - 1-2 - finely chopped
- Bell peppers - red, yellow, green, orange (any you have handy)
- Oil - 1 tsp
- Salt to taste
- Greek Yogurt * mix some Kefir to add more nutritional goodness to this dish
- Crispy lettuce shreds
- Tomato Salsa
- Sliced Avocado
Method to prepare filling: Add oil to a hot pan, add some finely chopped garlic, chopped spinach, fry for a minute or 2 till spinach is 1/2 cooked, then addd chopped Bell peppers and fry for a minute, then add cumin powder mix and stir fry, then add about 1/2 can for refried beans to the pan, mix and see that water is all evaported and becomes a bit thick. Do not add any salt since refried beans, enchilada sauce and cheese will all have salt in it. When everything comes together salt will be just fine. Switch off and leave the filling to cool down a bit. Once it has come to room temperature, add some shredded cheese and mix it and now your filling is ready.
Method to prepare wraps: Keep the wraps ready by heating them on a pan. Its upto you to add more oil and fry it until crispy but it should be flexible enough to be able to add filling and wrap them into rolls. In my opinion we don't have to add any oil to the wraps, you can simply make it crispy on the pan without oil.
Assemble and Broil: Now pour 1/3 can of Enchilada sauce into a small aluminum baking pan and spread it like a coating on the pan and keep it ready. Now as and when each wrap is hot add the filling and roll the wraps securely and place the opening facing the bottom of the pan. Repeat this process with rest of the wraps and lay it next to each other in the sauce layered pan. After the pan is filled with rolls, now pour the left over sauce on the rolls to cover them almost about 80 %. Sprinkle cheeze, top it all over with slices of Jalapenos, slices of olives, sprinkle parsley or celantro and broil in the oven at low until the cheeze has melted on top.
Enjoy these yummy Enchiladas covered with sauce, cheeze along with Lettuce, salsa, avocado and some greek yogurt on the side
Tips :
1. You can control the amount of cheeze that is topped to your need.
2. Allow the cheeze to become brown and crispy and then enjoy the mixed texture of crispy and soft enchiladas.
* The fact that this whole dish can be made very healthy by controlling the amount of cheese, choosing healthy version of wrap, any amount of vegetables and beans in the filling, goodness of greek yogurt, avocado, olives, Jalapenos, and can be enjoyed without guilt adds the healthy twist to this entire dish. It is a completely balanced meal with right balance of Carbs, proteins vegetables and good fats
