Green Papaya Salad

  


Ingredients:
  1. Green Papaya - 2 cups - Peel de seed and long and thinly shredded
  2. Green chilies - 3 or 4 (adjust to your spice levels)
  3. Garlic - 3 cloves
  4. Cherry tomatoes - 8 - chop in half
  5. French Beans Or Long Beans - 5 - chop 1 to 2 inch size
  6. Cilantro - small bunch finely chopped
  7. Peanuts - 1/2 cup - Dry Roasted and crushed coarsely
  8. Palm sugar OR Jaggery - 1 to 2 Tbsps. (adjust to your taste) 
  9. Lemon juice - 1 Tbsp.
  10. Salt to taste

Method: Pound Garlic, Chilies in a mortar pestle to a coarse paste, to this add green beans and pound roughly, next add the Papaya shreds and pound it roughly to bruise them and mix it up. Take into a serving bowl, and now add rest of the ingredients except peanuts and mix them well. Now top it with peanuts mix it lightly and serve fresh.

2. Since Papaya can taste bitter sometimes, peel 1-2 layers along with the skin, to avoid this bitterness.

4. Thai cuisine lovers! Optionally you can add Thai Fish Sauce (1 Tbsp.) and Dried Shrimp (2 small chopped) too to turn it into the Famous Papaya salad classic to Thai cuisine. For vegetarians, this dish tastes amazing even without these optional ingredients as well.

5. This is very refreshing and this can be a good side dish and light and wholesome dinner by itself since it has good portion of veggies and protein (peanuts).
