Green Chilli Pickle

 


 Ingredients:

  1. Jeera - 1 tbsp.
  2. Mustard seeds - 2 tbsp.
  3. Saunf seeds -1 tbsp.
  4. Dhania seeds - 1 tbsp.
  5. Methi/Fenugreeek seeds - 1/4 tbsp.
  6. Ajwain - 1/2 tbsp
  7. Big sized fresh Green Chilies -10 washed, dried and chopped to pickle bit size
  8. Turmeric powder - 1/4 tbsp.
  9. Asafoetida / Hing powder - 1/2 tbsp.
  10. Lemon Juice or vinegar - Add to your tanginess taste and for preservation purpose too
  11. Sesame Oil/Olive Oil/Any oil of your choice - 2 to 3 tbsp.
  12. Salt to taste

Method: 

Dry roast Ingredient 1 to 6 and grind it to a coarse powder. Now to chopped green chillies, add the ground powder, and rest of the ingredients, mix well and allow it to marinate well. You may enjoy it immediately if you can handle the spiciness or wait for a day or 2 for the chilli spiciness to reduce and absorb all the flavors and enjoy with roti or paratha or curd rice or as you prefer. 

Tips :

1. You don't have to heat the oil, you can mix just raw oil. I used toasted sesame oil and it tasted amazing with the slight nuttiness of the sesame oil

2. Actually, here every other ingredient is a Healthy Twist in this recipe including the Chillies that is abundant in vitamin C. However please use mild spicy Chillies if you cannot handle to heat of the chilies.
